Many years ago, Lesley Downer walked the same legendary road as the 17th century poet Basho. Along the way she picked up recipes from the country villages where she stayed. Later she spent time in a Buddhist monastery. From these unique experiences she has formulated her own view of food, of cooking, of an approach to life that marries harmony, ecology, taste and economy with ancient Japanese traditions.
Lesley Downer's Mindful Kitchen contains an array of healthy and wholesome recipes that typify this philosophy - to waste less, to respect the earth and to be mindful in both our cooking and eating. It features more than 90 recipes inspired by the ethos of reducing waste, respecting tradition and nature and refining the way we cook and eat, which incorporate the mix of Asian influences in Lesley's own life. The result is a stunning range of delicious vegetarian recipes that is both interesting and accessible to a Western audience.
